  • 2 tbsp chopped Onions
  • 2 tbsp Carrots diced
  • 2 tbsp Celery chopped
  • 1 tbsp Garlic
  • 4-6 cups Fish or vegetable broth
  • 2 tbsp Bay leaves
  • 1 tbsp Thyme
  • 2 tbsp Parsley chopped
  • Black pepper To taste
  • 2 tbsp White wine
  • Water: As needed for soup consistency
  • 1-2 tbsp Salt To taste, usually tbsp for seasoning.

Instructions
 

  • Sauté the aromatics: Add the chopped onion and minced garlic to the pot. Sauté them until they become translucent and fragrant, usually for about 2-3 minutes.
  • Clean the eel thoroughly, removing any scales and innards. Cut it into desired serving pieces.
  • Chop onions, carrots, celery, leeks, and garlic as per preference.
  • Heat a large pot or saucepan over medium heat.
  • Add a bit of oil and sauté the chopped vegetables until they soften.
  • Place the prepared eel into the pot with the softened vegetables.
  • Pour in the fish or vegetable broth until it covers the eel.
  • Add bay leaves, thyme, parsley, black pepper, and salt to taste.
  • Stir gently to combine the flavors.
  • Bring the mixture to a gentle simmer.
  • Allow it to cook for about 20-25 minutes or until the eel is tender and fully cooked.
  • If needed, add more broth or water to achieve the desired soup consistency.
  • Taste and adjust the seasoning as per your preference.
  • Ladle the eel soup into bowls.
  • Garnish with fresh herbs if desired.
